Over the weekend, I posted this picture of my most fabulous brunch entree on Instagram, and it received some rave reviews. I cannot take credit for this most amazing dish, because it is a masterpiece made by the hubs. Isn’t he the best? We weave the Paleo lifestyle in and out of our life, so this recipe falls in line with Paleo and the ever popular Whole 30. I love a recipe that is easily adjustable and inspired by some of the best but tweaked to be made just right. That’s what we do around here in our kitchen, try new recipes until we make them our own. My husband was ever so gracious to share his finely-tuned chimichurri recipe with y’all today, and I hope you’re as pleased with it as I am. I can’t wait for him to make this again. ;)
Chimichurri Sauce Recipe
½ cup cilantro, finely chopped
½ cup flat-leaf parsley, finely chopped
2 tablespoons fresh oregano, finely chopped
4-5 garlic cloves, minced
½ cup shallot, minced
1 teaspoon of chili pepper flakes (more or less depending on preferred heat tolerance)
2 tablespoons red wine vinegar
1 tablespoon freshly squeezed lime juice
½ cup of olive oil
Salt and pepper to taste
1. Combine ingredients together in a bowl and mix well.
2. Chimichurri can be made ahead of time but tasted best when used within 24-48 hours.
3. Makes about 2 cups.
This recipe is super simple, but it packs so much flavor. We paired our chimichurri sauce with a flank steak cooked to perfection over the gas grill. We always have our steak medium. It was then topped with a sunny-side-up egg. The chimichurri, egg yolk, and steak was the perfect combination. I could have easily had two servings of this. The next day, we paired the left over chimichurri sauce with grilled pork chops and avocado slices. Delicious. What will accompany your chimichurri?

Oh dear, I just love chimichurri!!! Love the idea of it on top of steak and eggs (even though I'm not a big steak eater)! Or even just eggs!!!

Girl, it was so good. I think it's restaurant worthy or better. :) I don't know how M managed to think up the combination, but it was delicious. We always get creative with our eggs. You kind of have to when you do Paleo. Hope you're feeling well! ;)
