Have you ever thought, “How in the world is my child surviving on snacks alone?” I have. Charlotte’s always been a pretty good eater, but the older she gets, the pickier she gets. Lately, it seems like all she wants to eat are snacks. However, it’s my responsibility to make sure she gets enough nutrients, and sometimes that can be tricky. I really strive to feed her vegetables and fruits throughout the day, but you know how it goes. Sometimes we need to pull tricks out of our mom hat to make our little ones eat healthier, especially when it comes to veggies.
Thanks to some awesome moms I polled, we came up with some tried and true ways to get your kids to eat more vegetables.
Mom Hacks to Get Your Kids to Eat More Veggies
- Garden Lites Muffins: Oh my goodness, people. Have you heard of these things? I don’t know about your kiddo, but Charlotte LOVES anything that has to do with chocolate or cake. She thinks it’s a real party to have either of these things. What do you get when you combine those things with vegetables? Garden Lites Muffins!
- The chocolate and blueberry muffins are veggie rich (33% to be exact), with zucchini and carrots as the first ingredients listed.
- They’re also gluten free, dairy-free, and nut free, made with clean and simple ingredients.
- Seriously, these are the best, healthiest, and most convenient snacks we have in the house.
- Charlotte loves them, and I make sure to pack them in her lunch to make so that she has a well-rounded meal. They are by far the easiest way to get her to eat some vegetables.

Mom Hacks Continued…
- Smoothies: Pack those puppies up with power greens, frozen berries, a banana, and milk or coconut milk, and you’ve got a real winner packed with nutrients. Don’t forget a fun straw for added fun.
- Scrambled Eggs: Another easy way to add in some vegetables to a meal is to mix them in your eggs. I had totally forgotten about this until one of my friends reminded me to add in some veggies to scrambled eggs. Spinach, bell peppers, mushrooms, and tomatoes are a few favorite add-ins.
- Green Bean Fries: Have you ever given your child green beans as a snack? Warm them up, give them a healthy dipping sauce, and let them go to town. They’ll think they’re green fries. Whatever works. ;)
- Veggies in Hummus: If your kid likes hummus, add in some spinach or bell pepper. Yummy and delicious.
- Roasted Veggies: Who doesn’t like seasoned, roasted veggies? Prep a big batch, bake it once at the beginning of the week, and then serve it until it’s all gone.
- Garden them Yourself: Plant vegetables yourself and have your kids help. They’ll be excited to try them after watering them and watching them grow.
- Don’t Make Them an Option: One of my best friends said her best tip to get her kids to eat more vegetables was to not make them an option. If your child knows they’re supposed to eat them, eventually eating vegetables will become a habit.
