Happy weekend!!! Only two more no-agenda Fridays in our calendar before we start the school year. Can you even believe it? I would be lying if I said I wasn’t craving fall and all that entails, but I’m still on the fence about this whole kindergarten business (as I explained here).
This week I’ve tried wrangling my kids while attempting to work to get my website back in tip-top shape, and that’s been as fun as dancing on hot coal. I have about a million blog post ideas stewing, and I cannot wait to get them all out.
First up is a tried and true snack that will be perfect for after school! Charlotte actually loved making these with me, but how fun would it be to surprise your babe with these when they get home from school. Just call me Joan Cleaver. You can be one, too!
Throw on a petty skirt and heels and snap your fingers or wiggle your nose and make it happen. Here’s what you need!
INGREDIENTS
- 1 cup of smooth honey peanut butter (our favorite is Nature Nate’s!)
- 1/4 cup raw & unfiltered honey (again, our favorite is Nature Nates)
- 24 pretzels (waffle shape)
- 3/4 cup chocolate chips
- 1 tbsp coconut oil
- 1/2 cup sprinkles
DIRECTIONS
- In a small bowl, stir together your honey peanut butter with the raw honey. (Try not to eat it all before building your bites!)
- On a parchment-lined cookie sheet, place a dollop of the mixture on top of 12 pretzels.
- Top those 12 pretzels with a second pretzel on top to create a sandwich. Set those aside.
- In a microwave-safe bowl, melt your chocolate chips and coconut oil in 20 second increments. Stir every 20 seconds until chocolate is smooth. Get ready to decorate!
- Dip each pretzel sandwich into the melted chocolate, dunking half of the pretzel. Transfer back to the parchment-lined cookie sheet. Sprinkle with sprinkles while the chocolate is still melted.
- Once all pretzels have been dipped and sprinkled, refrigerate until chocolate is firm.
- For best results, keep those puppies in an airtight container in the fridge.
They are just as delicious as they look!
