It’s that time again! Monday Menu, time! I think we should start a new series titled Keto with Kris. It has a ring to it, right? Today’s recipe is a keto chicken dinner that works like comfort food and as easy as your old casserole dishes.
Now when I say “keto dinner,” I want you all to realize that no food is actually “keto.” Keto is short for ketosis which is a STATE your body enters when eating high fats and low carbs. It’s that simple. But just for your own education, I want you all to know the difference. Research matters, friends.

We are loving this one, and I definitely make this on nights when I need something super easy and fast. You could definitely change it up and add some shredded chicken from a rotisserie chicken if that’s your jam, but the sliced chicken sausage is what we’ve been doing.
