Happy Friday, again! Summer is just zipping on by, and I guess it is mostly because we are staying plenty busy. Maybe we’ll slow it down a bit next week. Here’s a recap of our week and a super easy and extremely delicious lettuce wraps recipe for you.
ONE.
The Weekend: Let’s start from the very beginning. Last weekend was a great one, but a very busy one. (Am I sensing a theme here?) My brother-in-law made a visit, and it was so nice to see him. It had been a while. Charlotte absolutely loves her uncle, and it was nice to have him around for a few a days.
We also had a baptism to attend in Port Lavaca, because M & I are now godparents to my cousin’s little boy. It was such a special day to baptize little Liam! Almost all of my family has been baptized in this church, so it made it extra special. Here are a couple of pictures from the day.
We also remembered and missed our precious Popo, since he had been doing the baptisms for all of his great-grandchildren since he was the deacon in our family. His presence was definitely felt, and it was a great day of celebrating.
TWO.
Monday: Houston Moms Blog hosted a super fun playdate at PDQ really close to us, so we were excited to go. It was a cooking demonstration, restaurant tour, and lunch. Charlotte was a little shy at first, because that’s how she always is around new people, but once she felt comfortable, she loved helping make the chicken tenders.
It was a fun play date, and we enjoyed the yummy food, too!
Later that day, we went into to town for what we thought was a pre-screening of Finding Dory. I didn’t realize it was a first come, first seated kind of thing, and we ended up being too far back in the line to get in to see it. Bummer. But we enjoyed our quick trip into town and made the best of it.
And we color coordinated, so there’s that. I even have this blurry picture to remember the day the Griswold’s struck again.
THREE.
Tuesday: We went to the library for the first time, and I was in heaven because Charlotte absolutely LOVED it. She loves books, but the children’s part of our local library has so many fun activities for the kids to do. And since it’s summer, they of course have a ton of summer programs going on. I highly encourage you to check out your local library to see what kind of programs they have going on for you and your kiddos.
We attended Toddler Time, and there was tons of singing, dancing, and reading. Charlotte then worked on a craft for Father’s Day, and it was so cute to watch her work so hard. After it was over, she wasn’t quite ready to leave, so she helped the librarian sort the colors that had been used that day. Sometimes I forget how much this little girl has learned in the past year. She steals my heart every day.
FOUR.
Wednesday & Thursday: (I’m combining these two days because I still have a recipe to share.) Wednesday, we had my friend Kim and her little girl come over, and we shared donuts, the girls played, and Kim and I talked blogging.
Charlotte had patiently waited for them to come over because she really wanted to dig in to the donuts. Friend time is always the best time!
Then on Thursday, we went shopping. It had been FOREVER since we’ve been shopping, so you know I enjoyed that. We also met Daddy for lunch, and Charlotte loves when we get to do that, and I do, too.
These two are my whole world. :)
FIVE.
And now what you’ve all been waiting for! Here is the easiest and yummiest 20-minute meal ever, inspired by P.F. Chang’s lettuce wraps.
I searched high and low for a good lettuce wraps recipe, but all of the ones I found had way too many ingredients. I nixed the dipping sauce, because I knew I would be adding sauce into the turkey mixture. Basically, I had to come up with my very own recipe. Here’s what it looks like.
LETTUCE WRAPS
INGREDIENTS
- 1 lb. ground turkey
- salt & pepper to taste
- 3 cloves of garlic, minced
- 5 oz. sweet & sour duck sauce (I used about half of a 10 oz. jar.)
- 2 1/2 TBS low sodium soy sauce
- 8 oz. diced water chestnuts
- 3 green onions, chopped
- 6-10 lettuce leaves, rinsed and patted
- shredded carrots & bean sprouts
DIRECTIONS
- Heat skillet and begin to cook ground turkey. Add salt and pepper to taste. Cook until almost done, breaking up the turkey into small crumbles.
- Add minced garlic and cook until meat is completely done.
- Add in duck sauce and soy sauce. Stir to combine.
- Add green onions and water chestnuts to the mixture.
- Cook until heated through and vegetables are tender.
- Rinse and dry 6-10 lettuce leaves.
- Add the ground meat to the lettuce leaves. (They’ll look like taco boats.) Sprinkle with shredded carrots and bean sprouts.
So easy! And it was surprisingly so good! The only complaint that M had was that I didn’t make enough.
And that’s a wrap! That was our week and our favorite meal, too. Now we have another busy weekend planned, and then maybe we can relax for a while. What have you currently been up to?

YUM lettuce wraps!!! What an action packed week! Mercy. We are all about our library right now. They do a few activities, but the one closest to us also does a fun story and singing time. Elizabeth is always shy at first as well, but after a few songs, she’s leading a dance party in the middle of the room :) Hope you had a weekend full of fun and a little rest!
