Happy Friday! I am so thankful it’s the weekend. The last two weeks have been rough, but I’ll get to that in a minute. Let’s dive right in to the good stuff: a recipe, some thoughts, and what’s currently going on.
ONE.
I made this the other day, and it was DELICIOUS. The last time I made it was years ago. This was a total pregnancy craving, and I’m so glad I dug up the recipe. It’s the perfect summer dessert. Did I mention how easy it is to make? This requires canned peaches, but if you wanted to use fresh peaches, you would just slice up your own and make a simple syrup with it. I didn’t go that route. You know I’m all about the simple recipes.
EASY PEACH COBBLER
INGREDIENTS
- 1/4 cup butter
- 1 cup sugar
- 3/4 cup self-rising flour
- 3/4 cup milk
- 1 (24 oz.) can peach slices in light syrup (divide peach slices and syrup)
- cinnamon for sprinkling
DIRECTIONS
- Preheat oven to 350 degrees.
- Place the butter in a 2-quart baking dish and melt in oven while pre-heating.
- Mix sugar and flour together. Slowly add in the milk making sure the batter doesn’t get lumpy.
- Remove baking dish from oven. The butter should be completely melted.
- Pour batter directly over butter in baking dish. Do not stir.
- Spoon fruit on top of batter placing carefully. Be sure to NOT MIX. Just place each peach down filling up the dish and do not stir.
- Pour the syrup over the peaches and batter making sure to not mix.
- Sprinkle with cinnamon.
- Bake 45 minutes or until golden brown.
The batter will rise above the fruit which is why you don’t want to stir or mix when pouring the ingredients into the baking dish. Serve warm and top with a scoop of vanilla ice cream.

TWO.
I love following Emily Ley on Instagram (and Facebook…and I love her company and her planners). This quote she shared the other day was something I needed to hear at just the right time. It’s been a rough couple of weeks for no other reason than just being pregnant and tired.
Michael has been traveling for the past two weeks leaving me alone with Charlotte four days in a row, two weeks in a row. I don’t think that’s ever happened to us before; it was a first, and it was hard. I have so much respect for single moms and military wives and any other mom who has to do it alone for big chunks of time. It’s not easy. I just had a little taste of it, and all I have to say is that moms are super heroes.
I always have this notion in my head of how much I want to get done, but right now, I’m lucky to get one thing crossed off my to-do list for the day. I’m not perfect, and quite frankly, perfect is overrated. I do the best I can with each day that I have, and that’s all anyone can do.
If you ever see a less than perfect picture or caption from me (with heaven forbid a bit of pessimism), it doesn’t mean I’m being a Debbie Downer or I’ve lost my faith, it means I’m being real. I’m human after all. We all have our struggles, we all have our strengths, we all have our highs, and we all have our lows. It’s okay to show our less than perfect, because perfect doesn’t exist. Give yourself some grace when you feel like you’re failing, and take a deep breathe. It’ll all work out in the end, perfectly imperfect in every way. And that’s just my two cents about that.
THREE.
Last weekend, we went to the Houston Downtown Aquarium with some friends, and it was so fun. It was just sweltering hot mid-morning. My advice for Houston friends checking this out–go super early to beat the heat and the crowds.
It had tons of outdoor activities for the kids, a splash pad. Indoors, it had a stingray petting area, a huge tiger exhibit, and tons of aquarium exhibits. The restaurant also serves amazing food, too. If you go early and get through all of the activities, you can eat at the restaurant for an early lunch and beat the usual hour-long wait.

FOUR.
Since we’ve been having super long days with Daddy being gone, we’ve had more pool play dates than normal. I am so thankful for my friends with pools and for them loving us enough to invite us over. Charlotte LOVES the pool, and so do I. So far, I haven’t had to buy a maternity bathing suit, but it’s looking like I might need one in the next week or two. Anyone else living in the water?
FIVE.
Summer sales are upon us! We love Sugar Bit, and I had to share this with y’all, because hello 70% off. Run to their site to stock up on some cute clothes for your littles. It will be 100 degrees well into September/October over here, so summer clothes aren’t leaving our closets anytime soon. There are some perfect back to school pieces, too.
