Currently Confessing | Vol. 30…Happy Spring & a Recipe

Happy Friday and happy first day of spring! If you read yesterday’s post, thanks for coming back. I talked your ears off, so I’ll try and keep it short today. Let’s hop right to it, no pun intended. I take that back. Pun intended for sure. 

ONE.
Excited about…

Easter! I saw these pictures while scrolling through my Instagram feed not too long ago, and I almost died from the prettiness. I’m totally bummed that the rabbit chair covers are sold out and no longer available from PBK, but in case you want to make that fancy fresh flower DIY Installation, you can find the tutorial here. And if you do, please let a sister know so I can marvel at your mad skills. 
Now I’m all excited to get an Easter basket ready for Charlotte, along with finding an outfit for her for the most special occasion. I also am dying to finish my Bible study that I never finished this past summer, Children of the Day: 1 & 2 Thessalonians by Beth Moore. I need the rejuvenation in a very bad way, and Lent is still not over. I’ll let you know how it goes. 
TWO. 
Watching…
Cinderella. This past Saturday, I went to see the most amazing Cinderella movie with Meg, and we were so excited to go. After the babies fell asleep, we left the hubby’s for a girl’s night at the movies. You know you’re a toddler girl mom when you go watch a Disney fairy tale sans your child. I so wish Charlotte was at the age of being able to go to the movie theatre, but we’re just not there yet. Remember our Great Day Houston segment? Yeah, we’re not there yet. She will love the movie, I’m sure. We’ll just wait for the DVD. The movie had such a cute message and the cinematography, costumes, and special effects were amazing. The message was awesome too: Have courage and be kind. I found this pretty printable, courtesy of the Popsicle Blog. If I still had my classroom, I would totally print it out and frame it.

Also watching…The Sound of Music.

It’s the 50th anniversary of the film’s debut, and I sure did watch the 20/20 special with Diane Sawyer this week. It got me all kinds of nostalgic. It’s one of my all-time favorite movies, and I think it’s time that Charlotte starts learning the songs. “How do you solve a problem like Maria?” Just imagine me singing that, and you are bound to have a good day. So good.

THREE. 

Reading…



these books. Charlotte is LOVING these books she got for her birthday from her great-grandparents. She is such a little sponge these days, and she can point to almost all of the images when I ask her to find something. It is so much fun teaching her things and watching her learn and understand. Both of these books are definitely must-haves in your little learner’s library. They’re big board books, bright, durable, fun, and educational.

FOUR.
Wearing…

this little outfit. I think we’ll be wearing this quite a bit. I know I shared these pictures yesterday, but these pig tails, I die. I wanted to link some outfit details in case you need your baby to have a stylish outfit like this, too. Charlotte’s Aunt P is a cool kid, and bought this whole look for her. The outfit is actually from Gap Outlet, but I did find a very similar jacket from Old Navy and another cute gray romper that would pair well with the jacket. Dressing this little girl is too fun for me.

FIVE.
Making…

Chicken Bog. The hubs wasn’t feeling well at the beginning of the week, so he needed some comfort food. Chicken Bog is one of his favorites, and now it’s one of mine too. I altered this Paula Deen recipe I found on the Food Network’s website. Instead of using a whole chicken fryer, I used a rotisserie chicken. I also omitted the sausage and added carrots. Here’s what I did:

INGREDIENTS
1 rotisserie chicken, deboned & chopped
1 cup chopped onion
3 chopped carrots
1/2 cup (1 stick) butter
2 teaspoons Seasoned Salt (I used Lawry’s)
2 teaspoons Paula Deen’s House Seasoning, recipe below
1 teaspoon ground red pepper
1 teaspoon ground black pepper
3 bay leaves
4 cups water
4 cups chicken stock
3 cups raw white rice



DIRECTIONS

1) In a stockpot, combine the chicken, carrots, onion, butter, seasonings and bay leaves. 
2) Add the water and chicken stock and cook at a low boil for about 20 minutes or until vegetables are tender. 
3) Add the rice to pot, bring to a boil, stirring frequently. Boil for 10 minutes and then reduce heat.
4) Cover the pot and simmer for an additional 10 minutes until rice is done. 
5) Remove the bay leaves. Enjoy!

HOUSE SEASONING RECIPE:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix all ingredients together. Mixture can be stored in an airtight container for up to 6 months.

  13. Ohmygosh, I am dying over her little army jacket. I need to get my little gal one… and myself so that we can match. Little ladies are the best to dress up. I also have to admit, I am seriously jealous over your beautiful weather. I wish it was warm and sunny with blue skies here!! xo

    • Thanks, Amy! I need to get one to match too. Our weather is pretty stellar right now. Last week was yucky, so this week is a much like that picture. We’re loving it! Hope the weather turns nice for you soon!

    • Thanks, Liz! Yes she does. I had never heard of chicken bog either, but my husband used to live South Carolina, and I think it’s a Southern thing (not a Texas thing). It’s so delicious!

    • Um, you and me both Ashley! It’s serious inspiration if I’ve ever seen it. Little Peanut Magazine did a phenomenal job putting it together, did they not?! :) My picture to recreate something like that would probably end up in those “Pinterest Fails” pictures. Lol.
