Happy Friday! This week has been full to the max. Anyone else? I feel like we haven’t talked in forever. It’s been that kind of week (thank goodness for Instagram). I’ve been wanting to share a lot of things here, but it just seems like there is never enough time these days. However, there’s nothing like the present. Here goes it. Technically, I have 6 items of business to talk about today, so grab your tea or coffee, sit back and relax a minute. Let’s chat, shall we? Here’s what I’m currently confessing this week.
ONE.
Thankful for…
the best friends. Over the weekend, I got to see one of my very best friends at Charlotte’s birthday party. She means the world to me, but because life, we hadn’t seen each other since my baby shower. Gasp. It was amazing to catch up with her. We picked up right where we left off. She’s family. It was just like old times.
Also on birthday party Saturday, we received a sweet package from Canada from my best blogging friend, Tawnya. That same day, my friend Megan brought me a gift along with a present for the birthday girl (not to mention she helped me tremendously with the party favors). As Meg handed my those beautiful flowers as seen in the picture above, she said, “mamas get gifts, too.” I die. I have the best friends ever. I’m so thankful for each and every person I have on speed dial. You ladies are my village, and I love you! Charlotte feels the same, too.

TWO.
Watching…
Better Call Saul, Walking Dead, and Scandal. Anyone else obsessed with these shows? We are loving Better Call Saul. Of course I knew we would be because we LOVED Breaking Bad. Each episode keeps getting better, and I hope the writers keep it up. The Walking Dead is our Sunday night at-home date night. How romantic, right? We love the show. Fully invested. This season has been phenomenal. And my one obsession I have for myself: Scandal. I didn’t like last week’s episode. This whole story line with Olivia as a hostage became a little far-fetched. I haven’t watched last night’s episode, but one day before next week I will. No spoilers, please. ;) What are you watching and loving lately?
THREE.
Recovering from…
the mama bad day. (She was mocking me in that picture by the way.) These bad days seem to be a weekly recurrence. I don’t know if it’s been because I’ve been extra busy with asinine house chores and responsibilities or if Charlotte is just going through a “thing,” but the bad days have been happening more often than I care to admit. So yesterday, sister girl woke up on the wrong side of the crib. She cried for a good hour and wanted me to hug her like that was my sole purpose in life. I obliged, but then the crying turned to screaming. For the love. I thought, “Oh gosh, something is wrong with her. I need to make a doctor’s appointment.” Of course I took the first appointment available, and we jetted off to the doctor’s office. Miss Thang chatted with the nurses and her doctor, which she never does, and was given a good bill of health. What the?! I paid a 30 dollar copay to be told my daughter was just acting a fool. Now who was the fool? Later that day, after more crying of course, my knight in shining armor came to rescue me. He sent me to the nail salon to get my nails did, and I tried to relax. But then when I was rolling up my pants to dip my toes in the warm, hot tub water, I saw it. My legs. My hairy legs. That look on your face when you realize you haven’t shaved in what looks like centuries (insert wide-eyed emoji). It’ll get you every time. Here’s hoping we have a better weekend.

the blog. Lately, if you’ve been watching the news or reading the news online, all sorts of wonky stuff is going on with the internet world. I won’t even get started in the politics of all that jazz, but it was worth a mention, because that and some changes coming down the pipe from Blogger have me thinking about switching to WordPress.org. If you’re not a blogger, this probably has no meaning to you whatsoever, so feel free to move along to number five, but if you are a blogger, what say you? Are you on a self-hosted WordPress site or Blogger? Are you or will you ever change? This is a huge debate in the blog world if if it’s necessary or not, but I’m thinking I’m going to make the leap and be an adventurer. Because hey, my word of the year was “BRAVE.” Sink or swim. I’ll let you guys know when everything is official.
FIVE.
Making…
Tomatito. Say what? Basically it’s Huevos Rancheros without the jalapeños but with bacon. You still don’t know Spanish and what Huevos Ranchero is? Well, let me just tell you what Tomatito is. It’s a Mexican breakfast dish that is a tomato, bacon, and onion topping to put over your eggs. Sounds delicious doesn’t it? It’s a family favorite, and my Momo has been making it since the beginning of time. I grew up with it, and it is a comfort food for sure. It’s now the husband’s favorite, too. And guess what else? It’s Paleo friendly! Even better. Super simple to make, too. Since it’s really an eyeballing kind of recipe, all measurements are approximate.
INGREDIENTS
- 1 large can of peeled, whole tomatoes
- 3/4 large onion, diced
- 1 lb. bacon
- garlic salt (to taste)
- pepper (to taste)
DIRECTIONS
Prep
1. In a large bowl, Dice up the whole tomatoes to the consistency of your liking. Set aside.
2. Slice the bacon into one-inch pieces.
3. Dice the onions.
For sauce
4. Fry bacon until cooked, but not overly crispy. Drain half the fat. Set aside for next step.
5. Sautee onions in bacon grease until onions are translucent.
6. In a large pot, combine the diced tomatoes and tomato sauce, onions and bacon.
7. Season with garlic salt (about a 3/4 tablespoon…to me, that’s a lot of shakes) and pepper to taste.
8. Let simmer until bubbly.
9. Serve over your favorite type of egg. (My favorite is over-easy.)
10. Enjoy!

Oh I’m so sorry you guys had that rough day — even one day can throw off the next few days and I hate that. We are huge TWD fans in our house. Weekly viewing parties with friends, the whole nine yards. I love your fashion picks. I’ve been eyeing that pink and gold Minnie and Mickey shirt for a few weeks but haven’t pulled the trigger on buying it. No time like the present, right?

The Walking Dead is our Awards Show, Super Bowl, etc of choice. We skipped out on all of those to tune into AMC for TWD. Love it and so glad my nanny families have Netflix so I can re-watch the series during nap times!!

I don’t know if I can justify the cost of switching to WordPress! I just think $300 is outrageous, plus a monthly fee to keep your blog running. I’m not a die-hard blogger. I would really REALLY have to think about it.

Oh, two year olds! And it’s your first so you’re thinking, “what’s wrong, I must fix this!” (at least I was). It gets easier, I promise. We’re on our second round of it and the best solution I’ve found is to try to silly them out it: if they’re screaming, hug the screams out, if they’re crying, give them snuggles and then piggy back them around the house for a minute pretending to be a horse. I don’t always have time to handle it like that so we still end up with a crying boy in a heap on the floor but when I do, it seems to work.

Girl we are on the same page with the legs. That’s pretty much the whole reason I haven’t gotten a pedi when I’ve really wanted to recently. Being a mama is tough and we all have bad days. As long as the good are more abundant than the bad you’re doing good. :)

As for blogging, I LOVE WordPress and would totally recommend making the switch if you can. I have nothing to compare it to because I’ve only ever used it, but there are so many awesome plugins and tools. If you have any detailed questions if be happy to answer them! I use it for my business (online shop) and my EandA blog and it works great!
