Happy Valentine’s Day eve! I’ll make this quick today since I’m sure we’re all super busy on this fun and fancy Friday.
ONE.
Can I just stop for a second and flash back to this little session from last year? This was a picture from Charlotte’s one year portraits, and on Monday, my baby girl will be 2! I die. You better believe that I’ll be lamenting over that fact come Monday here on the blog. I’ll be enjoying the zoo with my crew today, my very favorite valentines.
TWO.
Did you see this post yesterday? I mean, I really poured my heart and soul into these deep words of wisdom sharing my most favorite beauty products. I kid. Sort of. But really, go read this when you have a chance, and tell me what your favorites are, too, por favor. I’m a little beauty product obsessed, are you? I needs to know these things. We talk about being a mom all the time around here, so I figured some nice, light beauty talk was a great way to keep things interesting.
THREE.
I made this last week, and it was delicious. I found the original recipe here. But I’m all about simplifying life, so I made this in the CrockPot with frozen chicken thighs. Here’s what I did.
Chicken Tortilla Soup
The easiest and most delicious crockpot chicken tortilla soup!
Prep Time
5 minutes
Cook Time
8 hours
Total Time
8 hours 5 minutes
Ingredients
- 1-2 lbs. frozen (defrosted) chicken thighs (I like the thighs because it adds so much more flavor)
- 1 15 oz. can corn
- 1 can Rotel (mild)
- 1 can black beans (drained)
- 1 yellow squash (sliced)
- 6 cups of organic chicken stock
- 1/2 tsp. cumin
- 1 small can diced green chilis
- 2 tsp. minced garlic
- 1/4 tsp. chili powder
- 1 1/2 tsp. salt
- 3/4 tsp. pepper
- Monterrey Jack cheese, shredded (optional)
- corn tortilla chips for garnish
- avacados, cubed for garnish
Instructions
- Place frozen chicken thighs in CrockPot, and add in all the ingredients except the cheese, chips, and avocados.
- Cook on low for 8 hours or high for 3-4 hours.
- Serve with cheese, tortilla chips, and cubed avocado. Enjoy! When the last three things are left out, this makes the perfect Paleo Chicken Tortilla Soup.
FOUR.
I need to document some of the love muffin’s latest and greatest here. She just fills my heart with so much joy, and she cracks me up constantly. Growing up is tough stuff when you’re a toddler, but I am so enjoying this season. Even the bad, teething, whiney days, too.
FIVE.
So here’s the thing. I need your help. I’ve been blogging for almost 11 full months, and it’s time to see what you think. When I first started I never thought I would keep up with it, and I definitely didn’t know how much I would love this space and meeting all of you wonderful people. Would you be a doll and answer these very quick questions about what you love about Seven Graces (or what you don’t) and what you want to see more of? I would appreciate it times a million. I want this space to be a place where it feels like you’re stopping by to catch up with your girlfriend, something like stopping by a coffee shop to come unwind and talk about girl things, just like you would with your best friend.
