Ever get that feeling that today is just going to be a good day? I hope that you have that feeling right now, because it is awesome. I’m choosing to be happy today no matter how gray the skies are and how cold and rainy it is outside. Make your own sunshine, people. Here’s a bit of sunshine from my week.
ONE.
Cooking…
Chicken soup for the soul. I shared this recipe a while back (it’s from my now most popular post to date, Best Cold Remedies for Toddlers, thanks to Pinterest), and I thought I’d share it again since I just made this last night. I’ll now have leftovers for days. This version is a little bit different than my original recipe, because I used a rotisserie chicken instead of a chicken fryer. Making life easy is my middle name. Almost. The best part about it is that it is Paleo compliant. Don’t ask me how I’m doing in that department, because this mama has been very weak. However, dinners have been mostly Paleo friendly every night this week. Minus the crackers that I ate with my soup. Lunches are a different story. But back to the point, this recipe never fails me.
Ingredients
1 Rotisserie Chicken (chicken deboned and chopped, include skin)
8 cups of organic chicken broth
3 chicken bouillon cubes
1 onion, chopped
3 bay leaves
6 carrots, sliced
1 can organic diced tomatoes
1/2 cabbage, cut into wedges
2 squash, sliced
4 celery stalks, sliced
dash of garlic salt
salt & pepper to taste
Directions
Place chopped chicken & skin in a large stock pot with chicken broth.
Add bouillon cubes, onion, and bay leaves.
Add bouillon cubes, onion, and bay leaves.
Add in all vegetables, including the entire can of diced tomatoes.
Add garlic salt and salt & pepper to taste.
Cook on medium to high heat for about an hour until vegetables are tender.
TWO.
Photographing…
all the things. As you can see, this is me living that glam life behind the camera. With that being said, I’m trying really hard to be more intentional about pulling this bad boy out and using my new lens (the Canon EF 50 mm f/1.8). The hubs is still way better than I am with it, but I’m trying. This is my favorite shot of the week using the nifty fifty.
THREE.
Excited about…
shopping with Sugar Bit. I’m letting y’all in on a HUGE surprise sale! Natasha is getting in tons of spring goodies for the shop so that means all fall/winter clothes must go. Take advantage of this, because I’m sure it’ll still be cold for forever at the rate we’re going. This sale is insanely good: 40-70% off all fall/winter clothing! Get to clickin’ though, because I’m sure all the good stuff will go quickly. The sale starts Friday, January 23, 8 a.m. CST and will last for a week.
FOUR.
Loving…
My little muffin. These are my four favorite pictures from Instagram this week. She has been such a character lately. From laughing at the drop of a hat for absolutely no reason at all to carrying around her little purse with a “cell phone” to lugging around her baby doll, I just can’t. She kills me. Loving her is the greatest honor and privilege I’ve ever had. Spoiler alert: I’m in planning mode for her 2nd birthday party next month, and so far I’ve done only two things. 1) I’m almost finished working with Morgan at Abbie Lee Design Paperie for Charlotte’s party invitations. I might faint at the cuteness. I’ll show y’all when we’re done with them. 2) I booked Pink Posh again for Charlotte’s two year portraits. So stinking excited! FIVE.
Listening to…
This mash-up. Like on repeat. I mean, I’m still listening to my marathon playlist, but when I need to chill out, this song is my jam. So good. Have you heard it? I shared it on my Facebook page a while back, but I’m still loving it. I wish I could download this version on iTunes.
And that’s all I’ve got for you today, sweet friend! We have a busy weekend planned which consists of house cleaning, a baby shower, and a date night. What about you? Anything fun going on? Whatever you do, throw kindness around like confetti.
