And we’re back to some regular whatnots on the blog today. I’ve posted four times this week. I don’t even know what to do with myself. All three of the previous posts had to do with blogging of sorts, but now we’re back on schedule to talk about regular shenanigans.
I’m loving that it’s October, because it’s the start of a wonderful season to all things fun. We have a lot to catch up on (and I have tons of pictures to share). So without further ado, let’s get down to my Five on Friday and what I’m currently confessing…
ONE.
Thinking about…
this little person. Y’all know how much I love this little girl, right? Every day gets sweeter and sweeter. I think back to the beginning of my motherhood journey, and it was tough. But she makes life so worth it! I’ll save all the little things that she’s doing lately for her 20 month update next week, but guys, she rocks my world. This was us last weekend galavanting around the front yard putting up some fall decorations. She loves being outdoors. Clearly. She was running away from me half the time.
She was sad when I took her inside. And she wanted to have no part of taking pictures on her chair.
TWO.
Wearing…
fall clothes. This past weekend, the weather was nice and crisp. It was still warm, but the breeze was nice enough to wear some jeans and closed-toe shoes. The rest of the week, not so much. But you better believe that we enjoyed it, and we are ready for the cool weather to grace us with its presence again. Charlotte is way cooler than I am, so here she is being a mini fashion blogger in one of her fall outfits.
THREE.
Thankful for…
fall decorations. Sure, you’re probably thinking, boring. But I am so thankful because the hubs said to me last weekend, “Let’s go buy some fall decorations.” Sound the chorus! We went to Hobby Lobby and Target. Boom. Don’t ever tell me miracles don’t happen, people. He also went into the attic to dig out our old decorations, so I am forever thankful for him, and our cute pumpkins that he picked out.

FOUR.
Making…
Crock Pot meals. ‘Tis the season for Crock Pot meals, y’all! This week, I whipped up the easiest chicken tacos I have ever made, and they were by far the best tasting tacos we have ever had. There were zero left overs. To make it even better, I only used three ingredients for the chicken.
Easiest Chicken Tacos
Ingredients:
2 lbs. Chicken Thighs
32 oz. Low Sodium Chicken Broth
1 package of McCormick’s Original Taco Seasoning
Set on high for three hours.
Mix and shred chicken.
Serve with taco garnishes of your liking.
You most certainly can add whatever ingredient you’d like to jazz this chicken up, or you could use your own homemade version of taco seasoning to make the chicken Paleo friendly. I was lazy and used McCormick’s. We have been really lax with our diet lately, so flour tortillas and cheese were on my plate. I also love adding Julio’s Homestyle Serrano Salsa. Delicious! Charlotte even loved the chicken. I made her a chicken, tomato, and guacamole taco, and she did not leave a thing for Chapman (our pup).
FIVE.
Anticipating…
our anniversary, the fair, and Charlotte turning 20 months. Next week will be four years of marriage for us. We’ll also be taking Charlotte to my hometown’s county fair for the first time. I can’t wait! And the same day as our anniversary, little miss will turn 20 months old. I can’t even. Where did my baby go? I’m so excited for next week, so if you see me posting tons of pictures, you know why. Don’t say I didn’t warn you.

Crock-Pots are where it's at. And it really was the easiest and tastiest chicken.

Thanks, Valerie! I know it. Decorating can be overwhelming, that's why I stuck to keeping it simple with a few things outside. I have a monogrammed pumpkin inside my kitchen, and that's about the size of it. ;) Happy Friday!
