When it comes to recipes, the easier the better. Bonus points if the recipe requires minimal ingredients. Thanks to the best mom friends, one of my sweet gal pals shared with me an easy 30-minute meal that my family loves, and I know yours will, too.
Pesto chicken pasta is a new favorite around here. Since having my baby eight weeks ago, life has had its fair share of challenges. It’s been a huge adjustment becoming a family of four, but we’re slowly getting the swing of things. Thankfully, easy meals make everyone happy and give us a little bit of normalcy.
I’ve made this meal every week for the past three weeks, and no one is complaining. Everyone is loving it! I even made this the other day when the husband was out of town on business, and it was just Charlotte and I at dinner time (baby brother lounged in his bouncer). You know you have an easy meal on your hands when you make it while the hubs is away.
I picked up our ingredients at Walmart, and it took me no time to find what I needed because I only needed three things: La Moderna spaghetti (our current favorite), pesto sauce, and a little over a pound of chicken breasts. That’s it, you guys! Here’s the super simple recipe.
Chicken Pesto Pasta
INGREDIENTS
- 1 package of high protein packed La Moderna spaghetti
- 7 ounces of pesto sauce
- 1 lb. of chicken breasts
- salt & pepper to taste
DIRECTIONS
- Preheat oven to 375 F.
- Slice the chicken breast in half to make it a thin slice of chicken. (See picture below.) You should have 6 pieces of chicken breasts.
- In a 9×11 casserole dish, spread half of the pesto sauce onto the bottom of the dish.
- Place the chicken breasts side by side in the dish, then smother with the remaining pesto sauce.
- Bake in the oven for 30 minutes.
- While baking, boil water for the La Moderna spaghetti. Add in a tablespoon or two of olive oil to prevent sticking.
- Add spaghetti to boiling water and boil for 11 minutes.
- Drain water from spaghetti and add in a half stick of butter.
- Plate the pesto chicken with a side of spaghetti.
- Enjoy!
Garnish the finished product with your favorite Italian cheese. Serve with biscuits or bread for extra yumminess.
If you have little ones that don’t like meat or sauces (the horror), serve the buttered noodles plain. They’re still just as yummy by themselves.
Charlotte loves this La Moderna pasta plain or as chicken pesto pasta. I don’t mind when she eats it plain, because La Moderna is a high protein packed pasta, keeping her plenty full.
She was happy, and when your little one is happy, you make that meal over and over again.
We thoroughly enjoyed our little dinner date at home.
This recipe makes a ton of food, so we always eat the leftovers the next day, too. It’s delicious!
